Tofu and grilled courgettes lasagne

Let me just blog that lasagna! It was really nice. Just look at this sea of cheese. I guess it's understandable that Lau wanted a light week after this.

This looks really good. I love tofu. Tofu is the best. Where can i buy it in St Andrews? Can you share the recipe? It's pity that many people dislike tofu.

Hi Yumi,

Actually, there are no good places to buy tofu in St Andrews. I usually get it from Real Foods in Edinburgh (http://www.realfoods.co.uk/), which in general is great. They have to shops, both of which are excellent, and both have really good tofu.

(And yes, I agree. Tofu is one of my favourite things to eat. I practically used to live off it before I came to the UK)

Real Foods?!?! I was looking at the shop from the Thai restaurant accross the street the other day. I thought about stopping by, but by the time I finished my dish, I was too full to remember anything.

It is known to be a good diet food, and so many ways to cook. Yumyum...

Oh, the recipe, I forgot. Well, actually I don't have a recipe. The sauce is made from onions, garlic, white wine, double cream and spinach (+ a dash of Tamari, and salt&pebber). From there it's just building the thing with lots of cheese and the tofu layers and the grilled courgettes. Remember to start with some sauce in the bottom of the pan (that goes for all lasagnas).

Does that make sense?
